refusal to accept a cancellation

At this time I guess I need an attorney A year ago after much angst I sent the required letter by registered mail now a year later I get a bill for a year membership. After calling every number i could find no one can help me. This is the most unprofessional company. What do i do?

Ballys has a history of this. Texas AG caught them billing former customers who did in fact cancel.
They claimed "it was a renewal offer", when it looked just like any delinquent account dunning notice.
You sent your registered letter, as required by contract.
Your registration number proves date sent, and delivery.
(If you hadn't sent it registered, they would probably have claimed they "never got it".)
Now that you call them on it, they stonewall, give you the run-around, a form of deception through "confusion".
They're hoping to run out your tenacity, wait a while, then present you with a "collection" demand, pretending "you agreed", and your earlier contacts to resolve the "error" never happened.
They sent you a fraudulent bill, that deceptively looks like "payment is owed", maybe even implying "collections" or "credit damage" if you don't pay it, yet they can claim was an "accident" if they get caught. That's called "plausible deniability", and is an aspect of most successful consumer fraud. You can bet a lot of consumers getting this just give up and pay it.
File a fraud complaint, in writing, with your state Attorney General.
Odds are, they will back off if they receive an inquiry letter from your AG.
If they keep harassing you, send it to a collection agency, or trash your credit, get an attorney, as you may be able to sue for violations of FDCPA or FCRA. You can find a consumeer attorney in your state through www.naca.net
